Do you know how to make delicious meatballs?

This week in cooking class, we learned how to make meatballs!

Ingredients:

1.5 lbs meat, ½ lb old Italian loaf, 1 medium onion, 1 green bell pepper, 3 cloves of garlic, 2TB salt, 2tsp pepper, 3TB dry oregano (or 1.5TB fresh oregano), 1 lb. whole wheat pasta, olive oil

Directions:

Have you ever made a panada?  A panada is an old world way to extend meat and use old bread so as not to waste.  So, take your day old Italian loaf and tear it up and soak in water, for about 5 minutes. Chop up the onions and green pepper and put into a big mixing bowl. Add your meat and mix it up.

Use a cheesecloth or a cotton cloth bag to squeeze all of the water out of the soaked bread, and add to the meat mixture. Add oregano, salt and pepper. Mix well and form your meatballs.

Once all the meatballs are ready to cook, put the pasta in salted (as salty as the ocean) boiling water with a dollop of olive oil to cook  – durum wheat pasta takes 8 minutes to cook, whole wheat pasta takes a little longer – check at 10 minutes.

Put a pan on the medium high heat and add olive oil – a healthy amount as this will end up being the sauce for the pasta. Sear all of the meatballs on all sides until golden brown. Then turn down the heat to low and cover for about 4-5 minutes.

When the pasta is al dente, take a cup of the cooking water and add it to the meatballs with the pasta. Mix it all up, and serve! These meatballs freeze well also, so make extra.
