Flora’s seasonal recipe: Spring spinach + mozzarella sandwich

4639259240_d50c976cbbI love making lunch, but didn’t have much time to really cook, and hadn’t prepared anything the night before like I usually do.

I did however, pick up a bundle of spinach at the farmer’s market this weekend, which inspired my meal choice today.

I had some leftover mozzarella from a delectable kale pizza I had made, and some fresh ciabatta bread. Why not make a quick Spring spinach and mozzarella sandwich?

The result was pretty spectacular:

Serves 1 – Prep time – 3 minutes – Total time 6 minutes

Ingredients:

  • 2 pieces of ciabatta bread
  • 2 small slices of fresh unsalted mozzarella
  • 1 handful fresh spinach
  • 1/2 tbsp olive oil
  • pinch of sea salt

Directions:

1. Prep ingredients: Cut up your bread, pop in the toaster. Slice your cheese, rinse and pat dry your spinach.

2. Assemble: Remove bread from toaster, drizzle olive oil on each side, add on 1 slice of cheese to each side. Top the cheese with sea salt, then layer the spinach on top. Marry the two pieces of bread, press down and dig in!
