Today is national celiac awareness day, and in honor of this day we have compiled a list of some gluten free recipes from our blog that might float your boat.
To put it all into perspective, here are some facts about celiac’s disease according to the National Foundation for Celiac Awareness:
- Celiac disease is an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food.
- An estimated 1 in 133 Americans, or about 1% of the population, has celiac disease.
- It is estimated that 83% of Americans who have celiac disease are undiagnosed or misdiagnosed with other conditions.
In this light, the only way to treat celiac’s disease is through adopting a strict gluten free diet.
