coconut milk and peach chia pudding

Chia seeds are versatile and fun, since they take on the flavor of what they soak in, kind of like how tofu takes on the flavor of marinades or sauces.

It looks like we are starting to make a chia seed library on our blog! Try our sunflower, date and vanilla chia pudding,  strawberry chia goodness, or our blueberry banana chia smoothie.

But by far, this one takes the cake.

The coconut milk makes this pudding extremely creamy, the sweetness brings it all together, and the seasonal summer peaches cleanses the palate.

Serves 4-6 Prep Time: 3 minutes Total time: 1-2 hours, or overnight.


  • 1 can of light Thai coconut milk
  • ~1/2 cup chia seeds
  • 1-2 tbsp of maple syrup or 1.5 tbsp of agave
  • 2 peaches, chopped


1. Soak: In 2 mason jars, add ~1/2 cup of coconut milk, 1/4 cup of chia seeds and 1 tbsp of maple syrup. Place the lid on and shake. Let sit overnight in your fridge – or let soak for at least 1-2 hours.

2. Prep and enjoy: Before you are ready to eat, rinse and chop up your peaches. Place 1 chopped up peach in each mason jar. Perfect to bring to work for a snack or for a  fast breakfast!

photo (12)Chia has become more of a household name these days (maybe not as popular as the infamous “chia pet”…yet).

Chia pets were actually made from sprouting chia seeds. Here is a great step by step guide on how to sprout your chia seeds.

For those of you looking for something fun to do with your chia seeds, try out this delectable pudding.

It’s naturally sweet, savory and has a wild texture.

A perfect breakfast or snack, this pudding will provide you with omega 3’s, fiber, protein, antioxidants, minerals and will hydrate you since chia seeds absorb up to ten times their weight in water!

Serves 2 Prep Time: 3 minutes Total time: 23 minutes


  • 1/2 cup, unsweetened coconut milk
  • 1/2 cup, water
  • 3 tbs chia seeds
  • 2 dates, pitted
  • Handful sesame seeds
  • 1 tsp vanilla
  • A few sprinkles of cinnamon


1. Prep and blend: In your blender or food processor add your coconut milk, water, dates, sesame seeds, vanilla and cinnamon. Blend until smooth.

2. Mix and store: Pour your liquid into two mason jars, add 1.5 tbsp of chia seeds in each. Twist on the lid, and shake it up. Place in your fridge for 20 minutes, then shake again.

3. Enjoy!

blueberry banana chia smoothie

6755467955_6ca437077bChia seeds are all the rage, so why not add them into your special smoothie for a boost of protein, omega 3’s, calcium and potassium?!

Here’s how:

Serves 1


  • 1 banana
  • 1/2 cup frozen blueberries
  • 2 tablespoons chia seeds


1. Set out your blender.

2. Peel your banana, and split into 3-4 pieces, then add into your blender.

3. Add in your frozen blueberries.

4. Blend until banana and blueberries reach a smooth consistency. Pour into a glass or bowl.

5. Add in chia seeds, mix them into the smoothie. Let them sit for 5-10 minutes, or until the chia seeds have puffed up and become gel like.
