Flora’s seasonal recipe: melted brie, apple, brussels sprouts sandwich

I got a little experimental one day, as my fridge didn’t contain many obvious lunch options. Up for the challenge, I spotted some brie, a spelt english muffin, some brussels sprouts, an apple and mustard, and made a surprisingly delectable lunch!

Here’s how:

Ingredients:

  • English muffin (or baguette, sliced bread, gluten free bread)
  • 3-4 thin slices of brie
  • 2-3 thin slices of apple
  • small handful of brussels sprouts
  • dollop of mustard
  • 1/2 tablespoon olive oil
  • pinch of salt

Directions:

Toast up an english muffin, or whichever bread you prefer and have on hand. Cut up the brie, and few thin slices of your apple. While your bread is toasting, thinly cut your brussels. In a small pan add olive oil, then in goes your brussels with a sprinkle of salt. Cook them over medium heat for 5 minutes, stirring, until slightly caramelized and fragrant. Assemble brie on the bottom piece of your bread, then spread mustard on the top piece. Top your brie off with the caramelized brussels sprouts, add apple slices, then place the mustard side on top of your goodies. Press down once, cut in half and savor all of those sweet, tangy and creamy flavors that come from this satisfying seasonal sandwich (and happy accident!).

A restaurant serving items like a Farmer’s Market Frittata, Kabocha Squash Risotto, and a Kale-Banana Smoothie typically wouldn’t lead one to assume that it had any type of connection with one of the largest fast food companies in the world. Yet LYFE Kitchen just may be the exception to that rule.

The brainchild of former McDonald’s president and chief operating officer, Mike Roberts, LYFE Kitchen represents the newest addition to the ever-expanding fast food world. Offering both restaurant-style food options as well as some grocery store items, the company strives to “promote sustainability,” working with suppliers that provide healthier and ethically-sourced products. “LYFE” is an acronym for love your food everyday, a message that the company encourages their customers to practice on a daily basis.

Yet, LYFE Kitchen does not simply aim to do well just in the kitchen. They are also committed to helping the general public become more knowledgeable about nutrition. In their words, they are just trying to engage our “Sixth Sense,” or our “intrinsic desire to do what’s right.”

LYFE Kitchen does so by implementing environmentally sound architectural designs for their Ca, sourcing ingredients responsibly, utilizing green packaging for grocery store items, as well as donating a portion of their proceeds to charities that focus on bettering the health, nutrition, and overall wellness of communities through the U.S.

Roberts recognizes the differences between McDonald’s and LYFE Kitchen, yet is grateful for his nearly 30 year stint there. Roberts says, “I had a great experience at McDonald’s. Now I want to bring farmers, growers, and restaurateurs together. That’s what I am about.”

ff_lyfekitchens4_fThe product of two seemingly disparate trends in today’s food world–fast food speed and nutritious sustainability–LYFE Kitchen is all about enjoying food while doing good for both your body and the world. Although there are only two locations in California as of now, the company plans to expand with ten more locations in the next year, in cities like New York and Chicago.

LYFE Kitchen has managed to become an exemplar model of an eco-friendly fast food restaurant. Hopefully, other restaurants of the same structure will strive to be as socially conscious as they are.

In order to cook at home it’s important to shop well, and wisely. Here are some tips for eating healthy on a budget from Cooking Matters:

  • Compare unit pricing: This is an important step in deciding what goes in your cart and why. By choosing the more affordable option, you can save a lot of money! For example, if you have the option between a 32oz bag of brown rice for 4.3 cents per ounce, or a 16oz bag of brown rice for 7.3 cents per ounce, what would you do? To save money you would chose the first option, as you would get more rice for your buck.
  • Practice reading food labels: Comparing nutritional information can help you make healthier choices. Here is some general information that may help guide you when looking at the nutritional value of foods, and here is some more specific information that will help you learn the percentages of these nutrients that your body needs.
  • Identify whole grains: Whole grains provides us with fiber, iron and B vitamins. Make sure to read food labels, and try to buy products with the least amount of ingredients. Also, when buying breads take a look to make sure that whole wheat is the first on the ingredient list, which means the bread is made up of mostly that ingredient.
  • How to buy fruits & vegetables on a budget: Chose frozen fruits and vegetables with no sugar, salt or fat added. The ingredient list should list the vegetable or fruit only. Look for canned fruit that is only packed in it’s own juices, and make sure to rinse them before eating. Rinse canned beans or vegetables to remove some of the sodium that is added for preserving the food. When buying local, try heading to the farmers market or stand at the end of the day for reduced price items. Even better, if you have access to a garden plot, back or front yard, patio, or even windowsill, try planting your own vegetables and herbs!
