Sweet potato bake – simple, yummy after school snack

Sweet potatoes are sweeet! When school is out and you are looking for a fast filling snack to tide you over through afternoon park play, sweet potatoes are delicious, nutritious and easy to pack. Sweet potatoes are high in beta-carotene, vitamin C and B6, potassium and manganese, and full of fiber. They strengthen the spleen and the pancreas and help to gently remove toxins from the body. They’re great for us! They can cook for 15-20 minutes while you unload the school bags, wash your hands and dress for the park. For small batches of anything baked, I love my toaster oven. It gets hot quickly and evenly, and is easy to clean.

This sweet potato was sliced into 1/4 inch slices, brushed with olive oil and sprinkled with sea salt. The result – sturdy sweet roots delicious on their own, but also a great accompaniment to nuts or sliced apples and a bottle of water for the park. I used to think about sweet potatoes as a part of dinner, until I learned that in the Dominican Republic sweet potatoes are a common breakfast. Breakfast, snack, lunch and dinner – enjoy them across your day.
